BBQ Fiends!

Our new favorite meals have all become based around our BBQ.  It keeps us from eating packaged, processed foods and generally gets us outside for some sun and fresh air.  I posted our kabobs a few days ago, but since then we have cooked a few other BBQ meals low on calories and high in protein!

Pork Ribs:
– Rack of Pork Ribs
– Pappy’s Seasoning

Carne Asada & Chicken
– Carne Asada, seasoned overnight with spices
– Chicken Breast, seasoned with lemon, onion, garlic pepper, and garlic salt

Salad Goodness

On day two of the new and improved Diana, I decided to have a huge salad for dinner.  As a teacher, I often don’t have time to make breakfast and forget to eat lunch!  I know, this is a horrible and is something that I am trying to change with the help of Matt, friends, and family.  When I got home tonight though, I was super hungry and decided to make a big meal.  This meant focusing on fresh produce to lower the calories and adding in some protein to keep a healthy balance.  Here is what I came up with:

Diana’s Epic Salad
– As much lettuce as you would like
– 15 baby carrots
– 5 radishes, quartered
– 5 slices of BBQ tri-tip, spiced with kitchen seasonings, no sauces, cubed
– 1/4 cup shredded cheese
– dressing to taste (I chose blue cheese, the most calories out of everything lol)
